The market supervision department immediately sent 17 batches of food samples to Guangzhou Huibiao Inspection Center for testing, and the sample test results issued on September 18th showed no abnormalities. Combined with the comprehensive judgment of clinical manifestations and epidemiological investigations by provincial and municipal experts, the pathogenic factor is Clostridium perfringens, which has caused acute gastroenteritis. The main reason is that the dinner dish "braised chicken leg" at the school cafeteria on September 10th was braised in the morning and stored at room temperature for a long time, and was not reheated before meal preparation in the evening, which did not comply with the relevant provisions of the "Food Safety Operation Specification for Catering Services" and the "GB31654-2021 National Standard for Food Safety General Hygiene Standards for Catering Services".
